Si Marcel PAGNOL revint en Provence pour y faire du cinéma, Sébastien CHAMBRU revint en Bourgogne pour y jouer du piano. Pour Lui, le retour aux sources en Bourgogne était nécessaire. Après un passage par l’une des brasseries de Paul BOCUSE (Le Nord), le gain d’une étoile au Moulin de Mougins et enfin l’obtention du titre de Meilleur Ouvrier de France en 2007, il choisit Fuissé en 2014. Il reprit l’établissement à deux doigts d’être préempté par la Mairie, faute de successeur. Ici, les collines provençales et le Garlaban cèdent leur place aux Deux Roches qui vous surveillent et l’eau des collines, c’est le vin. Le nom de l’établissement prend alors tout son sens : L’Ô des Vignes.

Aujourd’hui, une partie du restaurant est dédiée à un bistrot-bar à vins où Sébastien et son équipe vous proposent des classiques tels que le tartare de bœuf ou encore le gratin d’andouillettes. Une sélection de vins au verre de régions hors bourgogne vous attend pour un moment simple et convivial. Côté gastro, la brigade vous concocte de délicats mets selon les arrivages régionaux : la Bourgogne est à l’honneur.

Cependant, seuls les écrits restent. Sébastien en a bien conscience. Ainsi en 2015, il écrit un livre dédicacé à son père. Il rend là hommage à cette Bourgogne viticole qu’il aime tant. Oscar, son fils, pourra alors lire et relire ses recettes comme un souvenir d’enfance, tel La Gloire de Mon Père.
