Il termine sa 19e campagne de vendanges à Fosse-Sèche. Fatigué à la voix mais satisfait au fond : la quantité n’y est pas car les vignes ont subi quatre gelées printanières mais les jus sont bons. Aujourd’hui, le domaine compte 45 hectares d’un seul tenant : 15 hectares consacrés à la vigne – 9 ha dédiés aux cépages rouges (cabernet franc et sauvignon) et 6 ha aux blancs (chenin) – et le reste pour la biodiversité. Qu’entend-il par « biodiversité » ? Là encore la réponse est précise : 4 hectares de champs de fleurs avec plus de 30 espèces, pour créer des « zones réservoir » pour les insectes pollinisateurs (abeilles et autres) et la production apicole. La récolte se fait au pic de floraison pour une miellée uniquement issue des rehausses des 46 ruches. De plus, 4 hectares et demi de forêt ajoutés aux 20 hectares (un étang & des champs laissés à l’état sauvage) sont entièrement réservés pour la faune et la flore. Autre chose ? Oui, Fosse-Sèche est officiellement classé parmi les refuges LPO (Ligue de Protection des Oiseaux). L’engagement se poursuit avec la conversion du domaine en 2013 à BiodyVin. Avec une pointe d’amertume, Guillaume évoque une liste, qu’il espère exhaustive, des réunions, colloques et autres conférences environnementales où il est le seul viticulteur. Mais l’assurance et la modestie reviennent vite dans sa voix quand il parle de son frère Adrien. En 2010, il est venu le rejoindre dans l’aventure.
